When I was a child I would be the last one left at the dinner table. I’d be ‘toying’ over my food for hours. It wasn’t the fact that I didn’t want to eat. I could only tolerate foods in small amounts and depending on what I ate whether it agreed with my bowel.
My stomach complaints started the day I was born and it wasn’t until I was in my early twenties that I was diagnosed with Coeliac Disease.
I craved to eat sweets such as cheese cakes and apple pies but every time I let my guard down, I would suffer the following day. My diet between then and now had been very bland until I ‘discovered’ raw food.

Carob trees produce pods containing seeds. The dry, ripe outer casing of the pods (minus the seeds) is grounded to make carob powder. Carob powder is high in protein and a good replacement for cocoa powder as it is free of caffeine.
It contains Barium, Calcium, Copper, Iron, Magnesium, Phosphorus, Potassium Manganese as well as Vitamins A, B, B2, B3 and D. Its versatility has now made it a likable chocolate substitute. The pods can also be chewed raw. The seeds are used to make Carob bean gum.
